“American Goulash”

​“Healthy Mac & Cheese”
​
Ingredients:
1 1/2C uncooked pasta
1/2 head of cauliflower
2 medium zucchini
2Tbsp butter or preferred oil
2 Tbsp plain flour
1 medium onion finely diced
2 slices of bacon finely diced
1C milk
1C grated cheese

Instructions:
​-cook the pasta as per the directions. Drain and set aside.
​-roughly chop the cauliflower. Peel and roughly chop the zucchini and steam together until tender.
•while the veggies are steaming begin the cheese sauce•
​-preheat your oven to 350 degrees (F) and grease an oven proof dish (9x9 or 9x13)
-heat butter/oil in a pan
​-add the diced onion and bacon to the pan and sauté until onion is translucent.
​-add flour and cook for about 2 minutes while continually stirring
-gradually add the milk (preheating the milk in the microwave develops a smoother sauce)
​-bring the sauce to a boil and then remove from heat. Sauce should be pretty thick at this point.
-stir in 3/4C of grated cheese.
​-once the cauliflower and zucchini are tender, drain and then purée. (I usually use a blender, but it will need to cool first. It should yield about 2 cups of vegetable purée)
-stir vegetable purée into cheese sauce.
-combine sauce with cooked pasta.
​-pour sauce/pasta mixture into your greased dish and top with remaining 1/4C grated cheese.
-place in oven and bake for 20 minutes
•Serve and enjoy!•
​(Notes: omitting the bacon from the ingredients will give you a delicious vegetarian dish. Freezing this dish into a silicone muffin tray will create easy kid sized portion for future meals! Once frozen just pop them out and place them into a freezer bag and reheat as many portions as needed when hungry!)

Candy Covered Pretzels 

Ingredients:
 Bags 5 inch Pretzel Rods (can be purchased at most grocery stores)
2 Bags of Candy Melts (can be purchased at Michaels, Joannes & Walmart)
2-3 Tablespoons Regular Shortening  
Container Sprinkles or a tubing bag with candy melt for decorating.
Parchment paper
Individual bags (can be purchased at Michaels, Joannes & Walmart)


In small crock pot, microwave or sauce pan melt candy melts w/ 1 tablespoon shortening adding more shortening if needed. Careful not to burn candy mixture. Mix well. Dip pretzel rods leaving 1 inch space for handling.  Tap excess candy liquid place on parchment lined baking sheet. Space rods 1/2 inch part. 
Sprinkle sprinkles or drizzle candy melt liquid for decoration. Refrigerate for 45-60 minutes

Cake Balls

Ingredients:
1 cake box  (eggs, oil & water as per box instructions)
2 containers of frosting (homemade cake frosting optional)
2 Bags of Candy Melts (can be purchased at Michaels, Joannes & Walmart)
2-3 Tablespoons Regular Shortening  
Container Sprinkles or a tubing bag with candy melt for decorating.
Parchment paper
Individual bags (can be purchased at Michaels, Joannes & Walmart)

Bake cake as instructed, cool and crumble into tiny pieces using stand mixer or hands. Mix crumbled cake 

and frosting together, forming 2.5 inch balls, set aside. In small crock pot, microwave or sauce pan melt candy melts w/ 1 tablespoon shortening adding more shortening if needed. Careful not to burn candy mixture. Mix well. Dip balls into liquid candy, tap excess candy liquid place on parchment lined baking sheet. Space balls 1/2 inch part. Sprinkle sprinkles or drizzle candy melt liquid for decoration. Refrigerate for 45-60 minutes


Caramel & Chocolate Popcorn Preheat oven 225 degrees

Carmel Sauce
1/2 Stick Butter 
10 Carmel Squares 
25 Small Marshmallows (5 Large cut up)
1/2 Cup Brown Sugar
1/4 Cup Light Corn Syrup

Chocolate Sauce
1/2 bag of chocolate chips
10 Small Marshmallows (2 Large cut up)
1-2 Tablespoon(s) Shortening

Pop popcorn as directed, set aside. In sauce pan on low heat melt butter add carmel squares, corn syrup, brown sugar & marshmallows stirring so not to burn. In separate sauce pan add 1 tablespoon shortening, chocolate & marshmallows stirring so not to burn add additional tablespoon of shortening if needed.

Using a large brown paper bag or large bowl, add popcorn, drizzle carmel a little at a time & shake add chocolate a little at a time & shake. Pour mixed popcorn onto a parchment lined baking pan and bake for

5-7 minutes at 225 degrees.

Homemade Play Dough * Can be doubled,

Ingredients:
1 Cup AP Flour
1/2 Cup Salt
2 Tablespoons Boiling Water
2 Small packages of Kool-Aid

In a stand mixer  Combine flour, salt, oil and Kool Aid into a large mixing bowl. Add hot water, knead mixture, until mixture forms dough. If too sticky add 1/2 teaspoon flour at a time while still kneading. Keep in zip sealed bag when not in use. Great for party favors. You can add glitter, extra food coloring for more vibrant colors.



Homemade Silly Putty

Ingredients:
2 Parts White Glue
1 Part Liquid Starch

In a glass or metal mixing bowl combine glue and starch,. let dry until workable. Store in zip sealed bag.



Salt Dough Ornaments * Can be doubled,

Ingredients:

1 Cup AP Flour
1/2 Cup Salt
1/2 Cup Water depending on day (add 1/2 teaspoon extra water at a time if not pliable.)


In stand mixer mix ingredients together. Form into balls, roll out to 1/8 thickness, cut out with choice cookie cutter or hand or foot print ornaments on floured surface, poke hole using thin coffee straw or skewer for hanging.  Bake 200 degrees 4-6 hours on regular cookie sheet. 
 
Once cooled decorate with paint, varnish with Mod Podge or sealant to preserve. 

(Unbaked Dough can last 3-5 days in zip style bag)
